Healthy decisions! Recipes inside!

 I haven't been able to get to Farmers Market as much as I wanted to and I have to make up for the last trip I didn't blog about as well! So, I'm going to start with my last trip which was about 3 weeks ago. This was also the week I prepared a full meal with what I purchased. Here's the photo
 This trip brought me a lot of good and yummy things to eat! This was the first week my boyfriend and myself were able to make a completely organic salad. With all of the vegetables anyone could see why I was delighted to have an organic salad for a week. I bought chicken breasts as well for quick meals. And I bought a pork roast along with organic breakfast sausage. While I enjoyed all of the individual foods I bought I enjoyed what they became even more. So, here's a recipe for the pork roast I made. It was delicious!

Slow Roasted Pork Roast

1 Pork Roast, mine was about 3 -4 lbs
Seasonings, I used a combination of dried herbs I bought at Farmers' Market
1 onion, sliced
3-4 mushrooms, sliced
Pink Salt
Garlic

Heat oven to 325 F. Clean any meat you buy! Especially if it's bone in like this piece of meat. Dry it off and prepare it. Add some of the mushrooms, onions and garlic to the bottom of the pan. I  like to prepare my meat in the roasting pan instead of making extra clean up for myself. Add the preferred spices and seasonings generously on top and bottom of the roast. Add the rest of the mushrooms. onions, and garlic to the top of the roast. Now, it's ready for the oven! In three hours the roast should be done, use a meat thermometer to check the temperature.

With this I prepared the broccoli. I boiled it for about 5 mins then with a slotted spoon, I scooped up the broccoli into a serving bowl and added about 1/2 tablespoon of butter.

Even though I didn't buy potatoes at the market, I did make sure they're organic. I made Dill Potatoes as well to go with the roast.

Dill Potatoes

1 lb of golden potatoes
2 tablespoons of butter
2 Tablespoons of fresh, dried Dill
1 garlic clove, minced

Clean the potatoes before cutting them up. Dry them, then quarter them. Some of the potatoes might need to be cut again based on size. Prepare a Skillet on medium high heat, add the butter allow it to melt. Once it's melted add the garlic. Cook just until you can smell it, then add the potatoes. Stir them for a few minutes before adding the dried dill. Continue stirring the potatoes periodically because you don't want to burn the garlic! The potatoes are ready when you can stick a fork in them and they fall off of it.

On today's trip!
This morning's trip was not supposed to happen. I thought I had everything I needed from a store that claims to be organic. I saw a video expose on the store this morning after I'd been at Farmers Market. So maybe it was a good thing. These are just a few things that I cannot cook without. Thankfully, Just because fall is coming I don't have to give up some of my favorite veggies! Mushrooms are obviously my favorite because they're in almost every photograph I've posted with these blogs. I love the honey that comes from the market as well! It's a great companion to my Herbal Tea Concentrate. The best morning pick me up anywhere. Way better than coffee. The taffy apples I bought this morning didn't last, one went to my mother even though she did something that she should not have done yesterday. She flushed the salad I made for dinner the night before down the toilet yesterday morning. You gotta laugh to keep from getting upset right? Well, I laughed, but I'm still upset because now I have to pay for a plumber.

I can say my transition into going organic is almost complete. But if anyone knows how to obtain any seafood that is in fact organic, I'm very much interested.
