This trip brought me a lot of good and yummy things to eat! This was the first week my boyfriend and myself were able to make a completely organic salad. With all of the vegetables anyone could see why I was delighted to have an organic salad for a week. I bought chicken breasts as well for quick meals. And I bought a pork roast along with organic breakfast sausage. While I enjoyed all of the individual foods I bought I enjoyed what they became even more. So, here's a recipe for the pork roast I made. It was delicious!
Slow Roasted Pork Roast
1 Pork Roast, mine was about 3 -4 lbs
Seasonings, I used a combination of dried herbs I bought at Farmers' Market
1 onion, sliced
3-4 mushrooms, sliced
Pink Salt
Garlic
Heat oven to 325 F. Clean any meat you buy! Especially if it's bone in like this piece of meat. Dry it off and prepare it. Add some of the mushrooms, onions and garlic to the bottom of the pan. I like to prepare my meat in the roasting pan instead of making extra clean up for myself. Add the preferred spices and seasonings generously on top and bottom of the roast. Add the rest of the mushrooms. onions, and garlic to the top of the roast. Now, it's ready for the oven! In three hours the roast should be done, use a meat thermometer to check the temperature.
With this I prepared the broccoli. I boiled it for about 5 mins then with a slotted spoon, I scooped up the broccoli into a serving bowl and added about 1/2 tablespoon of butter.
Even though I didn't buy potatoes at the market, I did make sure they're organic. I made Dill Potatoes as well to go with the roast.
Dill Potatoes
1 lb of golden potatoes
2 tablespoons of butter
2 Tablespoons of fresh, dried Dill
1 garlic clove, minced
Clean the potatoes before cutting them up. Dry them, then quarter them. Some of the potatoes might need to be cut again based on size. Prepare a Skillet on medium high heat, add the butter allow it to melt. Once it's melted add the garlic. Cook just until you can smell it, then add the potatoes. Stir them for a few minutes before adding the dried dill. Continue stirring the potatoes periodically because you don't want to burn the garlic! The potatoes are ready when you can stick a fork in them and they fall off of it.

I can say my transition into going organic is almost complete. But if anyone knows how to obtain any seafood that is in fact organic, I'm very much interested.
